‘Dances with bees’
My visit to honey producer @chrisomelo in Greece
I still remember the first moment I stood among the beehives. It was warm, the air smelled of thyme, and the buzzing of the bees was like a melody that went straight to my heart.
Our beekeeper Ioannis and his colleague Konstantinos in Patras, Greece, do not work for mass production, but with dedication, patience and respect for nature. Every bee, every flower and every drop of honey has its place in this cycle. This August, I saw part of the large bee family in Tripolis, Peloponnese, proudly opening the honeycombs to tend to them and show us their golden treasure.
It was this moment that showed me that our honey is more than just a foodstuff. It is a piece of Greek nature, captured in every jar. When you taste it, you don't just taste thyme, oak or fir – you taste the sun, the wind and the unspoilt landscape from which it comes.
